The keys to success when learning an instrument are daily practice and scales. Their importance cannot be overstated. Since most students know what a major scale sounds like, as they learn new scales they can self-correct. There is no better way for students to learn about their instrument, and it can be done effectively while practicing on their own, at their own pace.
Instead of trying to wade through tonality and all goes with keys, if you teach that the key signature indicates a scale - one they have already learned and whose notes they will mostly be playing in this tune - and not a key or key signature, it will be much easier for your students to adapt and abide by them. Perhaps call the key signature their scale indicator.
